Instructions:
Pour apple pie filling into a 9-inch pie plate. Dot with butter;
sprinkle with lemon juice and cinnamon. Place in 400 oven for about 10
minutes, or until mixture is hot and bubbly. Meanwhile combine biscuit
mix and 2 tablespoons soft butter, stir in milk. Drop by spoonful on
hot apple mixture. Continue baking 20-25 minutes or until biscuits are
done. Serve warm with cream.

1.50 lb. Salmon fillet
1.00 T Butter

0.50 c Mayonnaise

Instructions:
Cut fillet in 4 serving pieces. Place large side of fillet toward edge
of Pyrex baking dish with center open. Pierce fish, dot fish with
butter, and cover with plastic wrap. Microwave Medium (50%) for 5
minutes. Mix mayonnaise, parsley, onion, and dill together. Spread
mayonnaise mixture on top of fillets and microwave Medium (50%) covered
for 5-6 minutes before serving. Garnish with lemon wedges. If steaks
are used, arrange with thin ends toward center of dish. One inch steaks
should be microwaved 5 minutes a medium power, covered with mayonnaise
mixture and microwaved for 5-6 minutes longer.

Instructions:
Sift flour, baking powder and salt together and set aside. Melt butter
and brown sugar in saucepan; cool. When cool, add eggs, one at a time.
Add flour mixture; add chips and nuts last. Spread in a jelly roll pan;
bake at 350 degree for 25-30 minutes. Do not overcook. Batter is very
thick. Cut in squares when cool.

Instructions:
Cut butter into dry cake mix until crumbly; reserve 1/3 cup of mixture.

In a small saucepan, bring 1 cup water to a boil. Stir in rice, remove

Instructions:
Grease 15 1/2 x 10 1/2 x 1" pan. Line with waxed paper- grease lightly
and flour. Heat butter and remove from heat. Stir in flour. Cook over
low heat, stirring till smooth and bubbly. Remove from heat, stir in
milk. Heat to boiling, stir constantly. Boil and stir 1 minute. Remove
from heat, beat in egg yolks, one at a time. Stir in salt, red pepper,
chives, and cheese. Cool at room temp, cover mix to prevent film. Heat
oven 350- Beat in whites with cream of tartar, stiff not dry. Fold in
1/4 whites into mixture, fold in remaining whites. Bake till puffed and
golden brown 35-45 minutes. Immediately loosen soufflΘ from edges of
pan, invert on cloth covered cooking rack. Spread with filling. Roll
from narrow end -cut desired slices when cool. Cook and stir green
onions in butter till tender. Stir in remaining ingredients. Heat till
hot.

Instructions:
Thoroughly combine the seasoning mix ingredients in a small bowl and set
aside. In a separate bowl combine the onions, celery, and bell peppers.
In a large skillet (preferably cast iron), heat the oil over high heat
until it begins to smoke, about 4 minutes. With a long handled whisk,
gradually mix in the flour , stirring until smooth. Continue cooking,
whisking constantly, until roux is dark brown, about 3-5 minutes. Remove
from heat and immediately stir in the vegetables and 1 T of the
seasoning mix with a wooden spoon; continue stirring until cooled, about
5 minutes. In a 2-qt. saucepan bring 2 cups of the stock to a boil over
high heat. Gradually add the roux and whisk until thoroughly dissolved.
Reduce heat to low and cook until flour taste is gone, about 2 minutes,
whisking almost constantly. Remove from heat and set aside.. In a
4-qt.saucepan melt 1 stick of butter over medium heat. Stir in shrimp
and the green onions; saute 1 minute, stirring almost constantly. Add
the remaining stick of butter, the stock mixture and the remaining 1 cup
stock; cook until butter melts and is mixed into the sauce, about 4-6
minutes, constantly shaking the pan in a back and forth motion. Add the
remaining seasoning mix, stir well and remove from heat ( if sauce
starts to separate, add about 2 T more of stick or water and shake pan
until it combines) Serve immediately.

Instructions:
Stir together gingersnaps, graham crackers and sugar. Drizzle with
margarine, tossing to combine. Press onto bottom and up sides of a 9"
pie plate to form a firm, even crust. Bake in a 375-degree oven for 5
minutes. Cool. For glaze, drain pineapple, reserving juice(unsweetened
juice). Cut pineapple into small pieces and set aside. Add enough
unsweetened pineapple juice (about 1 1/2 cups) to the reserved juice to
make 1 3/4 cups total liquid. In a small sauce pan stir together
pineapple liquid and gelatin, then let stand 5 minutes. Stir over low
heat until gelatin dissolves. Cover and chill to the consistency of
unbeaten egg whites (partially set). Spread 1/3 cup of the glaze over
bottom of crust. Slice bananas and arrange over glaze. Top with
another 1/3 cup of glaze and arrange strawberries over glaze. Stir
together pineapple pieces and remaining glaze, then spoon over
strawberries. Chill for 2 to 4 hours or until set. Before serving,
arrange kiwi fruit on pie.

Preheat oven to 450 degrees. Bake pastry shell for five minutes. Remove
from oven. Set oven temperature to 400 degrees. Fry bacon until crisp;
drain, and crumble. Cook onion until transparent in small amount of
bacon fat. Drain. Sprinkle bacon and onion over bottom of pastry
shell. Cover with cheese. Blend together eggs, milk, and seasonings.
Pour over cheese. Bake for 10 minutes. Reduce heat to 350 and bake for
30 to 35 minutes longer or until a knife inserted in center comes out
clean.

Instructions:
Monterey jack cheese for garnish. Cut steak into 1/2" cubes. Brown meat
in oil in Dutch oven, remove to bowl and set aside. Reserve 1/2 cup
onions- cover-set aside. Add remaining onions, peppers, and garlic to
drippings in pan over medium heat. Cook 10 minutes stirring
occasionally. Add more oil if necessary. Return meat to pan add tomato
and their liquid and remaining ingredients, except cheese and onions.
Heat to boiling. Reduce heat to low, cover and simmer 1 1/2 hours or
until meat is fork tender, stirring occasionally. Spoon chili into
large bowl sprinkle cheese on top for garnish. Pass reserved onion to

Instructions:
There are as many versions of vegetable soup in Italy as there are
cooks. Pancetta - Pancetta is the same cut of pork as bacon. It is
cured with salt and is not smoked. It comes rolled up like a large
salami. Widely used in Italian cooking, especially in Emilia-Romagna,
it is vital to many dishes. If available, buy a large quantity. Cut
into several pieces and freeze it. You can substitute domestic bacon
for Pancetta. It must be blanched in boiling water for two three
minutes to reduce the smoky flavor. Fresh side pork can also be used.
I'll be posting several recipes over the next while that call for
pancetta, so if you can find some, it won't go to waste. Prepare
chicken broth. Heat oil in a large saucepan. Add parsley and garlic.
Saute over medium heat. Before garlic changes color, add Pancetta.
Saute until lightly browned. Stir in cabbage. Cover and cook 1 to 2
minutes. Add remaining vegetables to saucepan. Cover and cook about 5
minutes. Add broth and water, if using, and prosciutto rind or ham
shank. Cover and reduce heat. Simmer 40 to 50 minutes. Remove half
the vegetables with a slotted spoon. Place in a blender or food
processor and process until smooth. Return to saucepan. Season with
salt and pepper. Serve hot with Parmesan cheese sprinkled over top.
Makes 8 to 10 servings. VARIATION: Toast about 20 thick slices of
Italian bread. Place 2 slices in each soup bowl and sprinkle
generously with Parmesan cheese. Ladle soup into bowls. Serve with
additional Parmesan cheese.
